As per the official logitech support forums, this mic issue appears to be somewhat common. I contacted Logitech about my faulty Streamcam and they are in the midst of sending me a replacement unit (after not too much back-and-forth with their support rep).

The first 1.84m USB-C extension (5gbps) only works for 1080p 30fps... Just ordered another 1m (10gbps) and 1.5m (10gbps) extension. Maybe this will work. I will keep you updated and will post the cable that works in here.
I found the solution. It's the Streamcam app. Uninstall it and just use Ghub. It's been working fine since I did that.

The replacement unit has worked flawlessly thus far. I've been using it about once a week for the last 2 months. I was pretty pessemistic about the value of contacting Logitech support (and getting a replacement unit), but I'm now super glad that I did.
I would say, this camera is a total crp. And it has serious USB3 compatibility problems. At least it does not work with Asmedia chips, which dominate the market.
The latest version of Logi Capture (2.04.23) is having issues. I downgraded to 2.00.226 and 60fps @ Full HD works again.

It's called "Spedal 1080P 60fps Webcam". Not really better than the Streamcam, but at least it can reliably deliver 60 fps.
Should anyone else come across this post looking for a solution, this cable worked for me when plugged into the 10GB/s USB 3 Gen 2 port of an ASUS Z590-E motherboard: Faracent USB Type C Extension Cable (3.3Ft/1m), USB 3.1(10gbps) ... I can't vouch for the 5ft cable as that's only 5GB/s, but the 3.3ft 10GB/s cable is giving me 1080p/60
